A fresh recipe for the coming berry season. 

Ingredients

3 cup mixed fresh berries

2 cans full fat coconut milk, refrigerated

¼ teaspoon grated ginger

1 teaspoon maple syrup

¼ lemon of juice

Fresh vanilla bean, about ½ pod

1 teaspoon lemon zest

4 leaves fresh mint, minced

Instructions

Place washed berries in a bowl. Scoop out the cream in coconut milk, being careful to not mix what has separated, placing the cream in a separate bowl. Whisk together ginger, vanilla, syrup and juice. Once mixed, scoop a generous amount on top of berries. Top with zest and mint.
