Fresh corn makes for a great summertime side, snack or salsa perfect for fish tacos, with fresh fish from Freshway Fish, or for housemade tortilla chips from Bella Vita Bistro.
4 ears of corn (Minton)
½ red onion finely chopped (Holley Family Farms)
1 jalapeno, finely chopped – (Pleasant Valley Farms)
½ cup chopped cilantro (Chuck’s Farm)
1 tablespoon white wine vinegar (Calolea)
¼ teaspoon chili powder
¼ teaspoon cumin
Salt and pepper to taste
Cotija for topping
Raw or grilled corn are both great with this salsa. The preference is yours, but we recommend fresh corn off the cobb for this recipe. Prepare the corn and cut off the cobb.
Combine all ingredients and allow to sit for 20 minutes to marinate the flavors.
