We’re sort of partial to summertime recipes, of course. In Northern Nevada, we have an abundance of fresh fruit and vegetables in season to great delicious and healthy dishes. This salad combines ingredients from a number of our vendors for a fresh easy weeknight meal. Add your favorite grilled chicken or fish recipe to make it a meal.
Ingredients
3 to 4 peaches or nectarines, skins left on, cut into chunks (about 3 cups)(Minton/Bravo)
½ small onion thinly sliced red onion(Rodriguez)
1 tablespoon honey (Rau Bees)
2 tablespoons champagne or white wine vinegar (Calolea)
1/3 cup olive oil (Calolea)
1 bag mixed greens (Holley/First Fruit)
1/3 cup chopped fresh basil (Pleasant Valley Farms)
1/3 cup crumbled goat cheese
1/2 cup chopped tomatoes (DVA)
Salt and pepper to taste
Add grilled chicken breast or fish to complete this healthy meal.
Instructions
Make the dressing and toss the salad: In a large bowl, whisk together the vinegar, olive oil, and honey. Add the mixed greens and basil, and toss.
Assemble the salad. In a bowl or on a large platter. Add greens, evenly distribute the peaches, goat cheese, tomatoes, and red onions over the greens. Serve immediately.
