Ingredients 

1 bunch fresh beets – golden or red.

2 Tbsp. Avocado oil

salt & pepper

 

Instructions 

Slice or dice the beets – however, you like them.

In a small bowl toss the beets with salt, pepper and oil.

Line a baking sheet with parchment paper.

Roast at 425 degrees F for 10-20 minutes, or until the beets are tender.
