Ingredients

Salad
3-4 cups kale
2 green onions, chopped
1 can black beans
1/2 cup corn
1 tomato, chopped
1 red pepper, chopped
1 avocado
1/2 cup cilantro
1-2 shredded chicken
1 cup cooked quinoa
 
Avocado dressing:
1/2 large avocado, pitted
1 tiny jalapeno
1/2 cup warm water
1/2 lime juice
1 tsp cumin
1/2 tsp salt
1 tsp pepper
 

Instructions

Put all dressing ingredients in blender or food processor and blend until desired consistency. Toss with salad.
