​2 cups Cauliflower

2 cups Broccoli

1/3 cup Cabbage

2 cups Brussels Sprouts

3 cups Kale

2 garlic cloves

1 teaspoon ground coriander

Juice from 1 lemon

Salt and pepper

Olive Oil as needed


Preheat oven to 400. Place all washed and diced veggies in a large bowl. Combined all ingredients, then place on a sheet pan and bake for about 10 minutes. Turn the broiler on for 3-5 minutes and let the veggies roast. 


Tip: Add any vegetables you love, like potatoes, squash, tomatoes, leeks, root veggies.
